Dr. R’s Red Wine Dark Chocolate Truffle
Mix the following dry ingredients well in a bowl and set aside.
- 2 C whole wheat flour
- 11/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Blend the following wet ingredients in a blender
- 1/2 C melted unsalted butter
- 3/4 C oat milk
- 1 teaspoon vanilla extract
- 1/4 C organic apple sauce
- 1/4 C honey
- 1 large ripe banana broken into smaller pieces
- 1 large egg
- 3 ounces organic baby spinach
- 3 ounces organic baby kale
Add blended wet ingredients to mixed dry ingredients. Mix thoroughly. Line muffin pans with cupcake liners or spray muffin pan with baking spray. Pour the batter 2/3 filled in the liners or muffin pan. Bake 20 minutes or until the muffins are slightly brown at the edges and bounce back when touched. Remove from pan and allow to cool on wire racks. Enjoy!
